    This week Maya Papaya CSA brought me something besides leafy greens, zucchini and yellow squash. I love these veggies and was excited to turn them into "zoodles" (zucchini noodles) using a 10 dollar spiralizer I bought from Wegmans. I no longer eat pasta for health reasons (grains arent healthy for you), but this pasta substitute is really the next best thing. The recipe I chose was "Shrimp Scampi with Zoodles" from the food network (so you know its good ). As usual I made some tweeks to the recipe. I added additional crushed red pepper since i like a little more heat. I also added some fresh squeezed lemon juice and shredded basil from my garden since I enjoy that "real" Italian ....

    Seasonal Recipes with Eli: Fennel!

    This week in my Maya Papaya CSA order I received bulbs of fennel. The flavor of fennel is similar to anise, or for you young folks think Jagermeister. Although I'm not a big fan of its licorice flavor, I wanted the challenge of preparing it in a dish I could enjoy. I read that roasting fennel lessened the licorice flavor, while bringing out more sweetness. The recipe I chose was "Roasted Fennel with Parmesan" from Giada de Lorentis.     Seasonal Recipes with Eli: Beets!

    This week Maya Papaya CSA dropped me off a bunch of local goodies including beets. Although I like beets I've never cooked with them. After looking through some recipes I settled on a Beet Salad with Goat Cheese. It was made with candied walnuts and an orange and balsamic dressing. I had lettuce and romaine on hand so I substituted those for the greens in the recipe. I added grilled chicken to add some protein and make it more filling.

    Seasonal Recipes with Eli: Portuguese Kale and Chorizo

    Using locally produced kale from Maya Papaya CSA (a food share program from Vermont) I was able to transform a veggie which many people don't love into something delicious. I used a Rachel Ray recipe to make a Portuguese Kale and Chourico soup
    Ingredients

    2 tablespoons (2 turns around the pan) extra-virgin olive oil
    3 medium white waxy potatoes, like yukon golds, peeled and diced
    2 medium onions, chopped
    4 to 6 cloves garlic, chopped
    2 bay leaves, fresh or dried
    1 pound kale, coarsely chopped
    Coarse salt and pepper
    1 (15-ounce) can garbanzos (chick peas), drained and rinsed
